L'AMAF voit finalement le jour en mars 2005. Son équipe dessine les contours du projet culturel et artistique de l'épicerie moderne, qui ouvre ses portes au public en octobre 2005. L'épicerie moderne base son travail artistique sur les musiques actuelles avec en fil rouge : "la voix". Des ambiances acoustiques aux mondes amplifiés, des musiques enracinées à celles prêchant l'ouverture, la programmation puise dans les traditions musicales en les utilisant au présent. L'espace de diffusion et de création de l'épicerie moderne peut alterner une configuration assise de 450 places avec une autre de 700 debout.
