Crep alla crema e mele Ingredienti per le Crep per 600 persone N. 300 uova Kg.125 farina Kg.250 latte Zucchero Ingredienti per il ripieno Kg. 500 di mele Kg. 50 di uvetta passita Un pizzico di cannella in polvere Procedimento per le crep Mettere in un recipiente alto ( tipo bollilatte ) le uova la farina, il latte, e il sale, sbattere il tutto con un sbattitore elettrico, o con una frusta a mano avendo cura che non rimangono dei grumi. Lasciare riposare per 2 ore poi passarla con un colino fine. Prendere una padella antiaderente scaldarla bene su un fornello a fiamma media, ungerla con un pizzico di burro, aggiungerci l’impasto, e formare delle ( frittatine sottilissime ), lasciarle cuocere prima da una parte poi dall’altra aiutandosi a girarla con uno stuzzicadenti. Procedimento per il ripieno Sbucciate le mele e tagliatele a spicchi sottili, passateli su una padella antiaderente con una noce di burro aggiungeteci l’uvetta che precedentemente avrete messo a bagno con un poco di vino bianco, e fate appassire il tutto a fuoco medio. Togliete dal fuoco e aggiungete qualche chucciaiata di crema pasticciera,e amalgamate il tutto lentamente. Stendete le crep in un ripiano divideteci il ripieno, piegatele a metà due volte a forma di triangolo “a piacere servire calde bagnandole con un poco di Gran Marnie o fredde spolverate con zucchero a velo”.
